How to Make Sweet Potato Brownies

When I first heard of sweet potato brownies, I was hesitant to try them. Eventually, I gave in, and I was shocked! Not only are they so easy to make, they actually taste good. These ones also don’t have any added sugar in them. They are sweetened with the sweet potato and honey. Sure they aren’t the “real thing”, but they curb my brownie cravings and my kids enjoy them.

Ingredients:

  • 4-5 sweet potatoes
  • 4 eggs
  • 3/4 – 1c honey
  • 1/2c flour
  • 3/4c cacao powder
  • 2 TBS peanut butter (optional)
  • sprinkle of salt
  • sprinkle of baking soda
  • Vanilla
  • Chocolate chips (optional)

Directions:

  1. Cook the sweet potatoes. You can cook them however you want, you just need to ensure they are soft enough to be mashed up.
  2. Mash the sweet potatoes in a bowl. You can also use a hand mixer. Either way, just try to make sure there’s no clumps.
  3. Add all the wet ingredients and mix well.
  4. Add all the dry ingredients, mixing well.
  5. Add the chocolate chips. Measure with your heart.
  6. Pour into a 9X13 sprayed pan.
  7. Bake for 30+ minutes. Check with a fork to ensure they are done.
  8. Let them cool, and enjoy!
